4 VegMe Burger from peas and quinoa
4 burger buns
1 jar VegMe Mayonnaise
250 g cocktail tomatoes
200 g frozen mango
2 green onions
1 lime
½ bunch coriander
Salt
Pepper
250 g frozen avocado
2 cloves of garlic
1 lime
1 red chilli
½ bunch coriander
Salt
Pepper
340 g canned corn
Start with the salsa: Chop the tomatoes and mix with the thawed mango. Finely chop the green onions. Add zest and juice from the lime. Chop the coriander. Mix and season with salt and pepper.
Guacamole: Mash the thawed avocado with pressed garlic. Add zest and half the juice from the lime. Chop the chilli finely and the coriander roughly. Mix and season with salt and pepper, add lime to taste.
Open the canned corn and drain the water. Fry it in a pan with some corn oil. Season with salt and pepper.
Grill both burgers and buns. Add salad, a dollop of mayonnaise, corn and the burger. Top it off with guacamole and salsa.
