Cooking time: about 30 minutes
2 packages VegMe Pulled Original
1 yellow onion
6 juniper berries
30 g dried funnel chanterelles or 200 g fresh funnel chanterelles
3 dl shallot fond (concentrated fond diluted with water)
4 dl plant-based unsweetened cooking cream
2 tbsp blackcurrant jelly
1 1/2 tbsp Dijon mustard
Salt and black pepper
Oil for frying
Peel and chop the onion. Fry the onion in oil until soft. Crush the juniper berries in a mortar, then add them to the pan together with VegMe Pulled Original.
Let the mushrooms soak in water according to the package instructions.
Add the mushrooms to the stew, along with fond, cream, jelly, and Dijon mustard.
Let simmer for 8–10 minutes and season with salt and black pepper.
Cook the rice according to the package instructions.
Chop the thyme and sprinkle over the stew.
Serve the stew with rice and sweetened lingonberries.
