
Serves 4
2 packets of VegMe Italian Patties
1 yellow onion
2 cloves of garlic
1 tbsp tomato puree
1 can of crushed tomatoes
½ vegetable stock cube
2 tbsp balsamic vinegar
2 tbsp chopped basil
2 tbsp oat cream
200 g vegan mozzarella
salt
pepper
400 g pasta
Finely chop the onion and fry in a saucepan. Crush the garlic. Add the tomato puree while stirring and let sizzle for a while. Add crushed tomatoes and stock. Let simmer. Stir in the balsamic vinegar and basil along with the cream towards the end. Blend the sauce until smooth. Season with salt and pepper.
Boil the pasta and mix with the sauce. Serve with shredded mozzarella and the freshly fried patties on top.
