Salad
1 package VegMe Pulled Original
Leaf spinach
Avocado
Your favourite tomatoes
Red onion
Sweet pointed peppers
Radishes
Mango
Mint
Beetroot hummus
1 package chickpeas
2 pre-cooked beetroots
Juice from 1/2 lemon
Salt and pepper
Instructions
Start by making the beetroot hummus. Mix the chickpeas with two pre-cooked beetroots and the lemon juice with a hand blender. Season with salt and pepper.
Make a salad base of leaf spinach, tomatoes, sweet pointed peppers, radishes, red onion and avocado. Chop and slice everything to your preferred size and place on a large plate or bowl, or directly onto plates.
Top with a generous dollop of VegMe Pulled Original, mango, beetroot hummus and chopped mint.
